Stop making excuses! Breakfast is the most important meal of the day, but it does not have to put a kink in your morning routine. Fuel your body with one of these three fast, healthy and delicious breakfast recipes.
Tex-Mex Breakfast Sandwich
1/4 Cup Egg Substitute
2 tbsp. Reduced Fat shredded sharp cheddar cheese
1 multigrain English Muffin, toasted
2 thin slices of avocado
4 teaspoons jarred chunky salsa
Directions: Coat a small nonstick skillet with cooking spray and heat over medium-high heat. Stir in the egg substitute and cheese; cook 2 minutes per side. Place the eggs on the bottom half of the English muffin. Top with the avocado slices and salsa, then replace the top of the muffin. Enjoy!
Vegetarian Herb Scramble
1 small red onion, finely chopped
1 container (14 ounces) soft tofu packed in calcium sulfate, drained
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon turmeric
1 cup shredded reduced-fat Cheddar cheese
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh thyme
Directions: Heat the oil in a large skillet over medium heat. Cook the onion for 5 minutes or until tender. Crumble the tofu into the pan. Sprinkle with the salt, pepper, and turmeric. Cook for 5 minutes, stirring frequently, until firm and lightly browned. Remove from the heat. Add the cheese, basil, and thyme and stir until the cheese melts. Serve with whole grain toast and fat-free milk.
Berry Morning Parfait
1 cup fat-free blueberry yogurt
1/2 cup reduced-fat cottage cheese
1/2 cup blueberries and/or sliced strawberries
2 tablespoons fat-free granola
1 teaspoon crushed walnuts or almonds
Directions: In individual cups or a large bowl, combine the yogurt, cottage cheese, berries, granola, and nuts.
